WHAT IS JABANA?

Jabana is Sudanese coffee that is highly concentrated and brewed in a unique way. 

In Sudan, the type of pots used to make and serve the prepared coffee can vary from tin to red clay. The coffee beans can be sourced locally or from nearby neighbors, Ethiopia, and are freshly roasted over a small fire pit and grounded by hand using the Fondok (traditional wood grinder). The coffee is usually spiced with cardamom and ginger for extra flavor and to add a powerful kick. 

The coffee is then served in small cups placed on a tray that is served with cookies and luqaimat. Coffee cups on the tray are then passed around.
